 Patience

Hey folks, the time has come to hang up my hat.  Lil’Iron and I have spent the better part of two years putting this site together.  It will still exist but in a different form.

I always wanted to share my favorite recipes and make it possible for anybody to get a professional result using their backyard smoker. 

The fear of being redundant has come. 

I can only show so many ways to do chickens, ribs and pork shoulders.  The videos on this site give you all the basics and a few tips.  I do hope you will use them if you need to and pass them on to friends and family.

I have had a great time and met many good people.  I will still answer all my emails and maybe from time to time put up something new I found.

Ah yes!  Summer is almost here.  Now, I am not a fan of hot weather but I do love the summer fruits and veggies.  I read a recipe from the BBQ-U Website.

Now I did a few things just a tad different…….

I used smoked Gouda cheese instead of cheddar, and a little bit of 2% Velveeta cheese.  The recipe does not call for bacon but I used it on my wife’s half. She does not like peppers and onions.

I have to admit, the best part is roasting the peppers.   The smells coming off the grill were just amazing.

I did not get pics of the corn roasting because I brushed bacon fat on the corn while it grilled. That will keep you pretty busy on a gas grill when it starts to drip.

Also, while I roasted peppers I had one of my favorite summer drinks.  Here’s what you do………..

Get a tall glass of brewed Iced tea

add some lemon and sugar. (or your favorite pink sweetener) to taste

add in some White label Jim Beam and sip till the food is done.

……and now!…………………the finished product.

Well I finally got to try out some of my cast iron from a few months back.   I have to say, I loaded up the ol Brinkmann this time.  

I put on some peppers and onions with a little………

  • olive oil,
  • pico de gallo powder
  • salt & pepper

I grilled these until tender and charred….mushrooms went on with a little oil and butter and cooked til tender.

Pork marinated in Wicker’s sauce and put over the fire till done…………….

It was a good Wednesday indeed down here at The BigIron.
