Dear readers,
I've a St. Patrick B-day and have been visited many a time by the Wonderful Fairy herself. Over the years I've taken almost every opportunity to test these postulates and have found them to be unequivocally true.

Hey BigIron
The weather is the same here too, its rained here all day and most likely will rain tonight also. I wanted to do something good on the smoker but I guess mother nature wants us to do something else. Have a good holiday my friend!!

Hey BigIron
I just watched your video about the baffle. As you know I work in a sheet metal shop so I have sheet metal to experiement with. My Chargriller is set up almost identical to yours except I have 3 thermometers on mine. I placed thermometers 2 1/2" from each side of the handle so I could get a good reading completely across the grates, then I have the factory one. My first attempt was shearing one to the exact width of one grate. At that length I would get a temperature flux of 25 degrees from one end of the smoker to the other. and close to 50 degrees different from the factory from the thermometer from the far side of the grill. I also tried increasing the lengths, notched one side and put a 45 degree break to angle the heat down thinking it would force the heat to move clear across the grill. That method helped but still I could not get my thermometers to balance out. What I ended up with is a straight piece of 12 ga stainless 18 1/2" x 12 1/2" no bends and no breaks. The piece of stainless actually runs past the thermometer closest to the fire box by about 3/4". My stainless steel plate originally was 13" long but it made one side of the grill about 15 degrees different so I sheared 1/2" off. Now I get a balanced temperature on both sides and it's actually pretty close on the cheapo factory gauge. I got a pile of scrap sheet metal figuring out the best way to make one, but it was well worth the effort, I figure climate differences would make the outcome a bit different but in the Yankee states it seems to be the right size. I hope this may help some of your website followers.

PS....Funny thing is this morning I painted my firebox too!!!

Hey BigIron

You know I have the graduation party this weekend for my daughter and when I opened up the shoulders I panicked. It had skin on. First thing I done was send you an email and ask for your help. Then I remembered your naked pork shoulder video. I remembered you did this video about the shoulders having skin on.

These videos are a Godsend. If not for your vidoes I would have cut the skin off. Your videos are tools for us backyard bbq'rs to use. I personally want to thank you for all the time and effort you put into this site so we too can smoke like a pro.

You are the best my friend, you dont know how much I appreciate this site.

Hey Big Iron
That Picture is kinda eerie, its almost like your hat and rig are taking a nap.

I hope and pray all the bad weather you had there is going to end. The more time spent cleaning up means less time on the grills.

Stay dry my friend and keep hold of your hat in all that high wind....
