Ok here goes. Really simple and really good……
Prep:
4 Portabella mushrooms with the stems removed.
Mix in a bowl a combination of:
Butter
Olive Oil
Garlic
liquid smoke or Hickory flavored wickers BBQ marinade
How to cook:
You can do this on the grill (gas or charcoal) or you can whip it up on the stovetop with a well seasoned cast iron grill.
Place mushrooms fin side down and brush with mixture
Let them cook until the juice starts to form on the side
Turn them over and brush with remaining mixture until the mushrooms are succulent and very moist and tender. The fins hold all the liquid and deep baste the mushrooms by absorption.
The mushrooms are so meaty they can actually take the place of a small steak.
Serve with a spinach salad and baked potato with all your favorite toppings. Be sure to include that glass of good wine or your beverage of choice.
