Ah yes! Summer is almost here. Now, I am not a fan of hot weather but I do love the summer fruits and veggies. I read a recipe from the BBQ-U Website.

Now I did a few things just a tad different…….
I used smoked Gouda cheese instead of cheddar, and a little bit of 2% Velveeta cheese. The recipe does not call for bacon but I used it on my wife’s half. She does not like peppers and onions.
I have to admit, the best part is roasting the peppers. The smells coming off the grill were just amazing.
I did not get pics of the corn roasting because I brushed bacon fat on the corn while it grilled. That will keep you pretty busy on a gas grill when it starts to drip.
Also, while I roasted peppers I had one of my favorite summer drinks. Here’s what you do………..
Get a tall glass of brewed Iced tea
add some lemon and sugar. (or your favorite pink sweetener) to taste
add in some White label Jim Beam and sip till the food is done.
……and now!…………………the finished product.

It is a blizzard here in Ohio, first one in about 10 years. All I’ve done is shovel snow and do the honey do lists. It had been nothing but a miserable weekend. I can’t figure out which is worse, snow or the honey do!!!.
We have tried this before and have always enjoyed!! We agree that smoked gouda is much better. We did mix in a 12 oz beer with the cheese and found this brings out the smoke flavor. Plus people enjoy knowing that it is a flexible dish!! Next time we will try the velveeta! Since it tends to be a little dry!! Thanks!
