Well I finally got the butts going around 8am. Mustard slather and a special rub for a 24 hour wrap in the fridge were the norm for these fine ladies. The charcoal ashed over and the coals from three kinds of wood charred down to a nice orange amber color. The smoke started and the drafts were set for the prettiest white smoke you have ever seen. The whole neighborhood came to life with activity.
The butts were nestled down on the warm cast iron bed that they would rest in for the next eight hours. The results? Well, you can see for yourself…………………YUMMY!
